Sesame Ginger Pork Stir Fry

Serves: 4 - 6

Cooking Time: 20 minutes

Ingredients:

Quantity Ingredient
500 g Mt Mercer Pork Fillet, sliced thinly
1 tblsp Oil
2 tsp Green ginger grated
2 tsp Seasame seeds
1 tblsp Oil
5 Spring onions, sliced
1 bunch Buk Choy, sliced
1 bunch Asparagus, sliced
1 bunch Broccolini, sliced
½ cup Ginger marmalade
2 tsp Soy sauce
  Steamed rice to serve

Method: Stove Top

  1. Place the sliced pork in a bowl with oil, grated ginger and sesame seeds. Mix well to coat.

  2. Heat oil in a large wok and stir the pork fillet until fragrant and well browned. You may need to do this in several batches. Remove from wok and set aside.

  3. Heat sesame oil in the wok and stir fry the prepared vegetables for 3 - 4 minutes.

  4. Return the Pork to the wok and stir in the ginger marmalade and soy sauce and stir fry for a further 3 minutes.

  5. Serve hot over steamed jasmine rice.
Notes: ginger marmalade may be replaced with lime or lemon marmalade for a delicious difference.
