| Tusan Roast Pork |

Green olive tapenade |

Prosciutto |

Mozzarella cheese, sliced |

Rocket leaves, washed |
| 50 ml |
Balsamic glaze |
Method: Pre-heat oven 180°C
- Cut slices along the length of the pork loin at 1 cm intervals 2/3 of the way through the loin.
- Spread a little green olive tapenade inside each slice.
- Place a slice of mozzarella and prosciutto inside each segment and place roast into a shallow baking dish.
- Brush roast with a little olive oil and season with salt and pepper.
- Roast pork in the pre-heated oven 180°C for 25 minutes per 500 g. Allow roast to rest 10 minutes prior to serving.
- Slice and serve over rocket salad leaves dressed with balsamic glaze.
Notes: this roast is also delicious served with roasted vegetable salad or warm potato salad dressed with vinaigrette . |
