Method: Pre-heat oven to 160°C
- Combine the lemon juice and zest, garlic, mint leaves, olive oil and salt and pepper in a shallow non-metallic bowl and whisk well.
- Add the pork to the marinade and marinate for several hours in the refrigerator.
- To cook pork: heat frying pan over a medium heat 2 minutes, add the diced pork to the pan and cook stirring 4 minutes. Rest 1 minute prior to serving.
- To serve: warm the pita bread in the pan or under a grill. Top pita bread with lettuce, tomato, onion, pork, garlic yoghurt sauce and finally garnish with chopped parsley.
Notes: pork souvlaki is also delicious served with apple sauce and mint yoghurt. |
